Ingredients:

1 cup Basmati rice (or any preferred long-grain rice)

2 cups mixed vegetables (carrots, bell peppers, peas, beans, corn - diced or sliced)

1 onion, finely chopped

2-3 cloves garlic, minced

1-inch ginger, minced

2-3 tablespoons cooking oil or ghee

1 teaspoon cumin seeds

1 bay leaf

4-5 whole black peppercorns

2-3 green cardamom pods

1 cinnamon stick

2 cups water or vegetable broth

Salt to taste

Fresh cilantro or parsley for garnish (optional)

Instructions:

Preparation:

Rinse the rice thoroughly under running water until the water runs clear. Soak the rice in water for about 20-30 minutes. Drain and set aside.

Heat oil or ghee in a large pan or pot over medium heat.

Sautéing Aromatics:

Add cumin seeds, bay leaf, black peppercorns, green cardamom pods, and cinnamon stick to the hot oil/ghee. Let them sizzle for a few seconds until aromatic.

Stir in the finely chopped onion and sauté until golden brown.

Adding Vegetables:

Add the minced ginger and garlic to the pan. Sauté for a minute until fragrant.

Toss in the mixed vegetables and sauté for 3-4 minutes until they start to soften slightly.

Cooking Rice:

Add the drained rice to the pan and gently mix it with the vegetables and spices.

Pour in the water or vegetable broth, add salt to taste, and give it a gentle stir.

Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan with a lid, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.


Fluffing and Serving:

Once the rice is cooked, turn off the heat. Let it sit covered for another 5 minutes.

After resting, remove the lid, fluff the rice gently with a fork to separate the grains.

Garnish with fresh cilantro or parsley if desired.
