Eid al-Fitr, the festive conclusion of Ramadan, is a time of celebration, family gatherings, and indulging in exquisite culinary delights. Among the many traditional dishes served, Beef Nihari stands out as a cherished favorite. This rich, aromatic stew, slow-cooked to perfection, embodies the essence of festive feasting. Eid Special: Authentic Beef Nihari Recipe ππ
Ingredients:
1 kg beef shank or stew meat, cut into chunks
2 large onions, thinly sliced
2 tablespoons ginger-garlic paste
4-5 tablespoons Nihari masala (store-bought or homemade)
1/2 cup ghee or oil
4 cups water
1/2 cup wheat flour (atta), roasted and mixed with water to form a slurry
Salt to taste
Fresh coriander leaves, chopped, for garnish
Ginger slices for garnish
Lemon wedges for serving
Homemade Nihari Masala:
2 tablespoons fennel seeds
2 tablespoons cumin seeds
1 tablespoon coriander seeds
1 tablespoon black peppercorns
1 teaspoon cloves
1 teaspoon green cardamom pods
1 teaspoon black cardamom pods
1 teaspoon cinnamon sticks
1/2 teaspoon nutmeg powder
1/2 teaspoon mace
Instructions:
Prepare the Nihari Masala (if making at home):
Dry roast all the spices listed under "Homemade Nihari Masala" until fragrant.
Let them cool and then grind them into a fine powder using a spice grinder. Store in an airtight container.
Cooking the Beef Nihari:
Heat ghee or oil in a large, heavy-bottomed pot over medium heat.
Add the sliced onions and sautΓ© until they turn golden brown.
Add ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
Add the beef chunks and cook until they are browned on all sides.
Sprinkle Nihari masala over the beef and mix well to coat the meat with the spices.
Pour in water, ensuring the meat is fully submerged. Bring to a boil.
Reduce the heat to low, cover the pot, and let it simmer for 3-4 hours until the beef is tender and the flavors are well-blended. Stir occasionally.
Thickening the Nihari:
Gradually add the wheat flour slurry to the simmering stew, stirring continuously to avoid lumps.
Continue to cook on low heat for another 30 minutes until the stew thickens to your desired consistency. Adjust salt to taste.
Garnishing and Serving:
Once the Nihari is done, garnish it with fresh coriander leaves and ginger slices.
Serve hot with naan or steamed rice, accompanied by lemon wedges for an extra zing.
