Ramadan Special: Spring Rolls and Samosas

Ingredients for Spring Rolls:

1 package of spring roll wrappers

1 cup cabbage, finely shredded

1 cup carrots, julienned

1 cup bean sprouts

1/2 cup bell peppers, julienned

1/2 cup cooked chicken or shrimp, finely chopped (optional)

2 green onions, finely chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

1 tablespoon oil

Oil for frying

Instructions for Spring Rolls:

Prepare the Filling:

Heat 1 tablespoon of oil in a pan over medium heat.

Add the green onions, cabbage, carrots, bell peppers, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are slightly tender.

Add the cooked chicken or shrimp, if using.

Season with soy sauce, oyster sauce, garlic powder, ginger powder, salt, and pepper. Mix well and cook for another 2 minutes.

Remove from heat and let the filling cool.

Assemble the Spring Rolls:

Place a spring roll wrapper on a clean surface with one corner pointing towards you (diamond shape).

Spoon 2 tablespoons of the filling near the bottom corner of the wrapper.

Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the edge with a dab of water.

Repeat with remaining wrappers and filling.

Fry the Spring Rolls:

Heat oil in a deep frying pan over medium-high heat.

Fry the spring rolls in batches until they are golden brown and crispy.

Drain on paper towels and serve hot with your favorite dipping sauce.

Ingredients for Samosas:

1 package of samosa wrappers or homemade dough

2 large potatoes, boiled and mashed

1/2 cup green peas, boiled

1 onion, finely chopped

2 green chilies, finely chopped

2 tablespoons fresh coriander leaves, chopped

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon garam masala

Salt to taste

1 tablespoon oil

Oil for frying

Instructions for Samosas:

Prepare the Filling:

Heat 1 tablespoon of oil in a pan over medium heat.

Add cumin seeds and let them sizzle for a few seconds.

Add the chopped onions and green chilies, and sauté until the onions are translucent.

Add the mashed potatoes and green peas. Mix well.

Season with coriander powder, turmeric powder, garam masala, and salt. Cook for 2-3 minutes.

Stir in the chopped coriander leaves. Remove from heat and let the filling cool.

Assemble the Samosas:

Place a samosa wrapper on a clean surface.

Fold it into a cone shape, fill it with 2 tablespoons of the potato mixture, and seal the edges with a mixture of flour and water paste.

Repeat with remaining wrappers and filling.

Fry the Samosas:

Heat oil in a deep frying pan over medium-high heat.

Fry the samosas in batches until they are golden brown and crispy.

Drain on paper towels and serve hot with chutney or sauce.
