Eid al-Fitr, also known as the "Festival of Breaking the Fast," is a joyous occasion celebrated by Muslims worldwide. It marks the end of Ramadan, a month of fasting, prayer, and reflection. One of the most cherished traditions during Eid is the preparation and sharing of special dishes with family and friends. Among these, Sheer Khurma stands out as a beloved dessert that symbolizes the sweetness and blessings of Eid. This rich, creamy pudding made with vermicelli, milk, dates, and nuts is a delightful way to end the month-long fast and celebrate the festival.

Sheer Khurma: A Delicious Eid Special Treat π
Ingredients:
1 liter whole milk
1 cup vermicelli (seviyan), broken into small pieces
1/2 cup sugar (adjust to taste)
1/2 cup dates, chopped
1/2 cup mixed nuts (almonds, pistachios, cashews), chopped
1/4 cup raisins
2 tablespoons ghee (clarified butter)
1 teaspoon cardamom powder
A few strands of saffron (optional)
Rose water or kewra water (optional, for fragrance)
Slivered nuts for garnish
Instructions:
1. Prepare the Nuts and Dry Fruits:
In a small pan, heat 1 tablespoon of ghee. Add the chopped nuts and raisins, and sautΓ© until they are golden brown. Remove from the pan and set aside.
2. Roast the Vermicelli:
In the same pan, add the remaining ghee and the broken vermicelli. Roast the vermicelli on medium heat until it turns golden brown and fragrant. Be careful not to burn it.
3. Cook the Sheer Khurma:
In a large, heavy-bottomed pot, bring the milk to a boil.
Reduce the heat to a simmer and add the roasted vermicelli to the milk. Cook until the vermicelli softens, stirring occasionally to prevent sticking.
Add the chopped dates, sautΓ©ed nuts, and raisins to the pot. Stir well to combine.
Add sugar and cardamom powder, and continue to cook until the sugar dissolves and the mixture thickens to your desired consistency.
If using, add a few strands of saffron and a splash of rose water or kewra water for added fragrance and flavor.
4. Garnish and Serve:
Once the Sheer Khurma reaches your desired consistency, remove it from the heat.
Garnish with slivered nuts.
Serve warm or chilled, depending on your preference.
