Special Ramdan Recipe π Chicken Shami Kabab
Ingredients:
500g chicken mince
1/2 cup chana dal (split chickpeas)
1 large onion, finely chopped
2 green chilies, chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
Salt to taste
Fresh coriander leaves, chopped
Fresh mint leaves, chopped
1 egg (for binding)
Oil for frying
Instructions:
Prepare the Chana Dal:
Wash the chana dal thoroughly and soak it in water for at least 1 hour.
Drain the water and cook the dal in a pressure cooker with enough water until it becomes soft. Drain and set aside.
Cook the Chicken:
In a large pan, heat a little oil and sautΓ© the chopped onions until they turn golden brown.
Add the ginger-garlic paste and sautΓ© for another minute.
Add the chicken mince, cooked chana dal, green chilies, cumin seeds, coriander powder, garam masala, turmeric powder, and salt.
Cook until the chicken is fully cooked and the mixture is dry. Stir occasionally to prevent sticking.
Remove from heat and let the mixture cool slightly.
Blend the Mixture:
Once cooled, blend the chicken and dal mixture in a food processor until smooth.
Transfer the mixture to a large bowl and add chopped coriander leaves, mint leaves, and an egg. Mix well to combine.
Shape the Kababs:
Take small portions of the mixture and shape them into round or oval patties.
Repeat until all the mixture is used up.
Fry the Kababs:
Heat oil in a frying pan over medium heat.
Fry the kababs in batches until they are golden brown and crispy on both sides.
Drain on paper towels to remove excess oil.
Serve:
Serve the Chicken Shami Kababs hot with chutney, raita, or a side of fresh salad.
These kababs can also be enjoyed as a filling in sandwiches or wraps.
